Creamy Corn And Broccoli Chowder

2 tbsp butter
1 medium onion chopped
1 clove garlic finely chopped
3 tbsp all purpose flour
¼ tsp black pepper
½ tsp tarragon
3 cups vegetable broth
3 cups broccoli chopped
2 cups corn kernels
1 cup half and half OR any kind of milk

  • Melt butter in a pot over medium heat and cook onion and garlic for 2 to 3 minutes until tender. Add in the flour and pepper stirring constantly for another minute then stir in tarragon, broth, broccoli and corn. Turn heat to high and bring up to the boil then reduce heat and simmer 10 minutes stirring occasionally, veggies should be tender. Stir in half and half and cook for another 2 to 3 minutes until heated through but do not boil.

Makes 4 servings
